You know that moment after a long day at work when your stomach starts screaming, “I need a sandwich, and I need it NOW”?
Yeah, that was me today. But having an every growing list of food allergies- and the big one requiring me to be dairy-free- finding a sandwich that doesn’t taste like cardboard or sadness is… let’s just say… a journey. Sigh 😔
Well, today I concocted something that hit the spot- all with just the few items I had on hand, in my fridge.
Meet the MVPs:
Violife Just Like Mature Cheddar Slices
Oh, honey. If cheddar had a cool vegan cousin who didn’t bring drama to the family reunion, this would be it. Bold, sharp, and actually edible (unlike some of the rubbery “cheeses” I’ve had before- that I absolutely won’t name here 👀). Violife is free from dairy + lactose, soy, nuts, gluten, and other nonsense. Vegan Society certified, Non-GMO, fortified with B12, AND Kosher.
So basically, it’s here to slay without wrecking your gut (or causing anaphylaxis).
Nature’s Own Perfectly Crafted Multigrain Bread
Thick, hearty, and most importantly: completely dairy-free. No fake preservatives, no sketchy corn syrup, just solid bread energy. Honestly, bread this good deserves its own fan club. When I say the slices are THICK I mean these slices are not your average sandwich bread. And thank THE LORD.
My Safe (yet satisfying) Grilled Cheese Recipe:
Heat up a pan, add a little olive oil (because we’re classy like that). Toast both sides of your bread until it’s giving golden hour vibes. Add those Violife slices and… okay, they didn’t exactly melt on command. But listen: that’s a vegan cheese thing. We work with it. (Because if we’re not dying, we’re celebrating every little win we can).
My pro-tip? Toss the whole sandwich into the microwave for 10 seconds (or less) on high.
BOOM. Cheesy, melty goodness that doesn’t feel like you’re chewing on plastic. And because we toasted the sandwich well on each side, it didn’t get soggy or limp when we nuked it.
